Why look at their portfolio?

Looking at their portfolio, if they have one, can give an instant indication as to how serious your client is about their business. It also saves asking the (slightly embarrassing) question "so, how serious are you about your work?" By this, you can see just how dedicated they are to their cause. However, this isn't a way of finding out how much effort you should put into the project: you should always give it 100%. Again, this shouldn't be a way of calculating how much you charge the company either: your fees should remain (reasonably) constant.

Work Frequency

Knowing how often you'll be asked to work for your client is another big one. Once you know how often you'll have jobs handed to you, you can use this as a rough estimate to see how many other people you can work for. If you have three different clients giving you work once or twice every month, it'll allow plenty of time for each other. Something you'll want to avoid is getting into a full time position with outstanding jobs for other clients to do. Ideally you should reject the full time positions and go for several part time positions.
